    This course covers the law regulating the manufacture, distribution, and sale of food products in the United States. Topics include the regulation of labeling, food additives, dietary supplements, genetic modification, HACCP, civil and criminal liability for defective products, inspections, importation, inspections, enforcement, and many other issues of concern in the regulation of food in the United States. The course is designed to give the student a better understanding of the issues involved in the regulation of foods and a general understanding of the full scope of food regulation in the United States.

    The online Home Food Preservation course will help home food preservers avoid dangerous, life-threatening contamination of foods. Individuals will feel confident in processing their produce and feeding their families safe, healthy foods. Home food preservation stimulates the local economy by encouraging locally grown and purchased foods and for individuals and families to grow their own gardens.

  • Food Safety Training for Food Service Workers

    Food Safety Training for Food Service Workers is a free online program offered through the Kent County Health Department and MSU Extension. The training informs and educates food establishment employees about the five risk factors that contribute most to foodborne illness. This basic food safety training covers personal hygiene and health, cooking temperatures, holding temperatures and cleaning of food contact surfaces.

  • FOR 110: Seminar on Contemporary Issues in Forests & the Environment

    Learn about the amazing ways that forests promote global environmental quality and human well-being. Topics include the role of forests in: mitigating climate change, creating rainfall, promoting human psychological health, and providing the materials for carbon-storing wooden skyscrapers.

  • FOR 204: Forest Vegetation

    At the end of this course you will be able to walk into any woodlot in Michigan and identify by sight virtually all of the trees and shrubs present. You will understand the evolutionary relationships among these species, as well as how they interact with their environment. If you travel to other regions of the country or world you will have the skills to easily learn to identify all the trees and shrubs you encounter.

  • FOR 222: Forestry Field Methods

    In this course, students learn a variety of basic field techniques used in forestry, including tree/forest measurements and inventory techniques, land navigation with GPS and orienteering with a map and compass. The course assumes no prior knowledge of forestry and is mostly outdoor-lab-based, with classroom lectures providing context and supplemental learning to facilitate field exercises.

  • FOR 340: Forest Ecology

    This course will provide students with an understanding of fundamental ecological processes which control the composition, structure and function of forest ecosystems, and form the foundation for sustainable forest management.

  • Forest Biogeochemistry and Climate Change

    This course will cover biogeochemical cycling of carbon and nutrients within forest ecosystems.

  • Forest Carbon Policy, Economics and Finance

    This course will cover policy, economic and financial dimensions of the development and implementation of forest-based climate change mitigation projects.

  • Forest Certification and Climate Change

    Learners will develop a robust understanding of forest land values and ecologic services linking carbon management and climate change mitigation activities with forest certification.
